The enzyme polyphenol oxidase (PPO) in bananas reacts with oxygen, breaking down these beneficial compounds. Though bananas are nutritious, researchers stated that it may be best not to mix them with flavanol-heavy foods like berries, grapes, or cocoa in smoothies.
