To test purity of butter, take a small piece and place it on your palm, said Soumita Biswas, clinical nutritionist. "If it melts owing to room and body temperature, it's pure," she stated. On heating butter, if it melts immediately and turns dark brownish in colour, it's pure; but if it turns light yellow in colour, it's adulterated, Biswas added.
