Also known as Ragi Ganji, this summer beverage is native to South India and is commonly consumed in Karnataka, Tamil Nadu and Andhra Pradesh. To prepare ragi ambali, mix ragi flour with water and allow it to ferment overnight. Mix it with boiling water, add salt, buttermilk, hing, temper with curry leaves and onions, garnish with coriander leaves and enjoy.
