A method for checking impurities is that once melted, ghee is clear, transparent and free from sediment. Iodine can be used to check for starch in ghee by adding a few drops and observing if it turns blue. If 2 ml of melted ghee turns red upon adding 5 ml of concentrated HCl, it's adulterated with coal tar dyes.
