Lingad (Diplazium esculentum), or fiddlehead fern, is a young, coiled shoot foraged in the Himalayas during monsoon. Known as Lengdu, Dhekia, or Nigro locally, it's harvested when tender and curled, before it matures and becomes fibrous and unfit for cooking. It is densely nutrient, boost immunity and supports bone health.
