Traditional fermented foods can benefit the health of people in India, according to a study published in journal Food Chemistry. The study found that fermented foods contain bioactive peptides consisting of 2 to 20 amino acids, which can regulate blood pressure, blood sugar, immunity, and inflammation. These peptides interact with biomolecules to exert antimicrobial and immune-modulatory effects.
