Combining Vitamin C, like lemon, with plant-based food like dal boosts iron absorption in the body. About 100mg of Vitamin C taken with a meal can increase plant-based absorption by over 60%. Plant-based iron is in ferric form, which is poorly absorbed. Vitamin C converts it to ferrous form, which is more soluble and easily absorbed by the intestinal cells.
